They are vegetables, greens mostly, harvested when they are 10 to 20 days old. We cut our microgreens above the root around the time the first true leaf appears. Depending on the season, we grow sunflowers, peas, kale, broccoli, collards, arugula, mizuna, tatsoi, several mustards, two kinds of radish, beets, amaranth, and others. Microgreens are an excellent source of nutrients (minerals, antioxidants, proteins, and vitamins) and the flavor of the vegetable is concentrated.
